Sweet potato and Harissa Salad
2 x sweet potatoes – peeled and roughly chopped
1 x pack of halloumi – diced
2 x tins of chickpeas – drained
3 x tbsp of harissa paste
2 x red peppers – roughly chopped
Salt to season
Preheat oven to 180°C.
Place your chopped sweet potatoes on an ovenproof tray and drizzle over some olive oil, a light dusting of mixed spice and season with salt.
Roast in the oven for approx. 15 mins or until lightly browned. Remove from oven and leave to cool.
Once cooled mix in your remaining ingredients – a simple yet delicious dish to add to your table.
